Oven Baked Tomato Salmon 蕃茄烤鮭魚


Superfood combo 超級健康食物

Ingredients: Salmon (1.5 pound), tomatoes (2 or3), salt (1/3 -1/2 teaspoon), pepper, parsley or other herbs, Parmesan cheese

Perp time: 5 minutes. Cooking time: 40 minutes

材料: 鮭魚 (1.5 磅)、蕃茄(2-3 個、鹽(約1/3 – 1/2茶匙)、胡椒粉、西香菜或其他香料、起司粉

準備時間:5 分鐘 烹煮時間:40 分鐘

Directions:

  • Preheat oven at 350 degrees F
  • Grease a baking dish 7”x11” with vegetable or olive oil
  • For even cooking, slice salmon with a knife in thicker parts of the flesh to halfway of thickness, 3-4 slices in even space
  • Place Salmon fillet in baking dish
  • season with salt, spreading salt on salmon with fingers. Add more salt on thicker parts
  • Sprinkle pepper, parsley and Parmesan cheese to taste
  • Slice tomatoes and cover the salmon with the slices
  • Sprinkle Parmesan cheese and parsley on tomato slices
  • Place the baking dish in oven for 40 minutes

作法:

  • 烤箱預熱到華氏350度
  • 7×11 吋的烤盤塗蔬菜油或橄欖油,防止沾鍋
  • 用刀子在鮭魚肉較厚部分,往內切至約魚肉的一半厚度,大約3-4 次,儘量保持一致的間距,如此可以使不同厚度的魚肉烹煮均勻。
  • 將鮭魚放入烤盤中
  • 鮭魚用鹽調味,可用手指輕輕塗抹均勻,魚肉較厚部分可以多塗一些鹽
  • 把胡椒粉、西香菜、起司粉,按個人口味灑在鮭魚上
  • 蕃茄切片後,均勻鋪在鮭魚上
  • 將西香菜和起司粉灑在蕃茄上,喜歡起司粉味道的可以多加一點,不喜歡的話,可以省略這一步
  • 放入烤箱烤約40分鐘
Ready to serve 可以上桌了

Note: Salmon and tomatoes are both superfood. Their high nutritional values make this dish a frequent flyer in our dinner table. The juices from tomatoes are absorbed by salmon during cooking. The salmon comes out juicy and tender with a sour hint in it. If you don’t have parsley in hand, you can substitute it with Italian seasoning, rosemary, oregano, basil or any other herbs you like. It will create a slightly different taste of dish. I chose parsley this time because of its green color in the photo. Ha Ha !!! Enjoy this simple but delicious dish and stay healthy!

筆記: 蕃茄和鮭魚是我們知道的超級食物,營養價值極高,這道菜的完美結合,成為我們家餐桌上出現率極高的一道佳餚。從蕃茄烤出的汁液,讓鮭魚吸入,使鮭魚肉軟而多汁,帶點蕃茄的微酸,十分美味。若是你沒有西香菜在手邊,也可以用義大利調味料、九層塔、迷迭香、奧勒崗草或其他你喜歡的香料。放入不同香料,會使味道有些微小的不同。我這次選用西香菜是因為我喜歡它鮮亮的綠色,在照片中會比較漂亮。哈哈! 試試這道簡單、美味又營養的蕃茄鮭魚吧!希望你也會喜歡。
