Salmon Teriyaki 日式鮭魚排


Ingredients: Salmon fillet, ginger, sesame oil, salt, soy source, honey

Prep time: 5 minutes Cook time: 15 minutes

材料: 鮭魚、薑、麻油、鹽、醬油、蜂蜜

準備時間:5 分鐘 烹煮時間:15 分鐘

Directions:

  • Salmon fillet (about 2 pounds ) rinsed and dried with paper towels. Use salt to lightly season the thick portions of the fish. Cut the fillet into 2-inch wide slices. Cut a small piece of ginger to thin slices.
  • Pour 1 tablespoon of sesame oil into a large nonstick pan. With medium heat on a stovetop, cook the ginger slices for 2 minutes
  • Arrange salmon slices on top of the ginger. Cover the pan and cook for 5 minutes or till the edges of salmon turn color to pink.
  • Evenly pour 3 tablespoons of soy sauce and 2 tablespoons of honey on top of salmon
  • Keep the pan uncovered. Cook for 10 minutes or till most of the sauce thickened and absorbed by the salmon. In the meantime, turn salmon over 3 times or so to make sure salmon evenly coated with the sauce and not burned. Pay extra caution at the end to avoid overcooking. The fish can turn golden brown to black within 1 minute after the sauce is dried out in the pan.

  • 鮭魚(大約2磅)清洗後用紙巾擦乾。用少許鹽均勻塗抹在魚肉較厚的部分。用刀子把魚切成約2吋寬的魚片。用刀子把小塊薑切成薄片。
  • 取一個大的不沾鍋,倒入1 大匙麻油,把薑片放入鍋中,用中火加熱2分鐘,
  • 把鮭魚片排入鍋中,加蓋煮約5分鐘,直到看到鮭魚的邊緣變成粉紅色。
  • 將3大匙醬油和2大匙蜂蜜均勻加在鮭魚上
  • 不加蓋,繼續煮10 分鐘直到醬汁收乾。其間鮭魚需要翻面3次左右,讓醬汁均勻分佈在鮭魚兩面,同時也避免燒焦。醬汁快收乾時要格外注意,因為鮭魚很可能在1分鐘左右從漂亮的金黃色變成黑色。

Note: Seasoning thick portions of the fish with a little salt is a good tip to avoid a blunt taste inside the portions. The thin ginger slices also taste pretty good after absorbing all the flavors. After the fish is done and removed, you will find a good amount of oil left in the pan. l like to stir fry vegetables with the remaining flavorful oil to make a side dish. Broccoli is my favorite choice for the salmon teriyaki due to their nice color combinations. In the picture, I used frozen mixed vegetables for the side dish. I like their color contrast too.

This is a good dish for special occasions and gatherings. You may like to practice turning the fish over in one piece and browning but not burning the fish prior to the event, Simply take out some of your beautiful plates to fit your decor. Arrange salmon, broccoli and rice on the plate. I will use a small bowl or measuring cup to shape the rice for a nice presentation. You will receive a lot of compliments from your friends and family as I did. Just don’t let them know how easy it is to make this delicious dish,

筆記:在烹煮前用少許鹽塗抹在鮭魚較厚的肉上調味,可以避免醬汁滲透不進去,讓那部分的肉淡而無味。薄薑片吸收醬汁之後,吃起來也相當美味。鮭魚煮好盛盤後,鍋子裏會留下不少油。我一般會利用這些油來炒蔬菜。我喜歡用綠色花椰菜來配鮭魚排,因為顏色搭配起來很好看。在照片中,我選用的是冷凍的混合蔬菜,這也是另一種選擇,顏色對比也不錯。

這道菜在練習翻魚時不要翻碎,魚的顏色要煎的焦黃但不要燒焦之後,很適合作為特殊節日的慶祝晩餐。挑選配合裝飾的漂亮餐盤,把鮭魚、綠色花椰菜和白飯一起排放在盤中。我會使用一個小碗或量杯盛白飯,然後將白飯倒扣在盤子上,看起來十分賞心悅目,吃起來更加舒心美味。你一定能像我一樣得到家人或朋友的許多讚賞,就是不要告訴他們這道菜的簡單調味與做法。可以用我的説法”做法嘛,解釋起來有點複雜⋯⋯”然後轉移話題。哈哈!
