Salmon Tofu soup 鮭魚豆腐湯


Ingredients: Salmon, tofu, watercress, green onion, salt, Hondashi or bouillon powder (optional)

Prep time: 8 minutes Cooking time: 15 minutes

材料:鮭魚、豆腐、西洋菜、葱花、鹽、鰹魚粉或高湯粉(可不用)

準備時間: 8 分鐘 烹煮時間:15 分鐘

Directions:

  • Salmon (0.5 lb) cut to small slices. Tofu (soft) cut to thin slices, similar to the size of salmon slices. 2 green onions washed and chopped. One bunch of watercress washed and cut in half.
  • With medium heat, cook 8 cups of water in a pot.
  • When the pot is boiling, add salmon slices first.
  • After the pot back to boiling, add tofu, watercress and green onions. Season with about 1 teaspoon of salt to taste. Add 1/4 teaspoon of Hondashi or bouillon powder (optional).
  • When the soup is boiling again, turn off the heat. The soup is done.

作法:

  • 鮭魚(約0.5磅)切成小塊,豆腐(我喜歡用軟的)切成像鮭魚一樣的小塊,2根葱洗淨切成葱花,西洋菜一把洗淨切成兩段
  • 拿一個鍋子,倒入8杯水,用中火在爐子上煮
  • 鍋內的水煮沸時,加入鮭魚
  • 等水再次煮開時,加入豆腐、西洋菜和葱花。加大約1小匙鹽調味,可以考慮加入1/4小匙鰹魚粉或高湯粉。
  • 鍋內水再次沸騰時,就可以熄火了。這道美味的湯就完成了。

Note: This recipe was created by one friend who did not cook much at the time. He decided to make a soup from leftover salmon sashimi and tofu, simply adding chopped green onions and salt. Surprisingly simple and good so he shared this soup with us in a potluck dinner. I like to add Hondashi to enrich the flavor of soup, please see the post of pan baked eggs with shrimp for detail explanation for it.

From his idea, I save leftover salmon slices (the end portions) from other recipes such as baked salmon and salmon teriyaki and use them in this soup, Simply store them in a sandwich bag in freezer until having enough for the soup. I add watercress in the recipe to make it even healthier. This is a hearty soup that contains balanced nutrition and not too heavy. This soup is especially good to have when you are not feeling well and having no appetite.

筆記:這道湯是由我一個不常煮菜的朋友創作出來的。他把吃剩的鮭魚生魚片和豆腐煮成湯,再加鹽和葱花調味,就成了。令人驚訝的簡單與美味,所以他特地帶了這道湯來參加晚餐聚會,和大家分享。我喜歡在這道湯加入鰹魚粉調味,讓它的味道更有層次,你可以看看我之前贴的蝦仁烘蛋食譜中的詳細解說。

從這位朋友的靈感啓發,我把做其他鮭魚料理所剩下的魚片存起來。通常是魚的兩端不太齊整的部分,把他們放在三明治袋中,存在凍箱,等分量夠了,就可以煮湯了。我加了西洋菜讓這道湯更健康。這是一道營養均衡的湯,也不會油膩,特別適合生病胃口不好的時候喝。
