Chinese cabbage and dried shrimp stir fry 開陽白菜


Ingredients: 1/2 Chinese cabbage, 1 tablespoon of small dried shrimps, 3 green onions, corn starch, salt, Hondashi or bouillon powder

Prep time: 5 minutes Cooking time: 15 minutes

材料:大白菜半顆、1 大匙蝦米、3根蔥、太白粉、鹽、鰹魚粉或高湯粉

準備時間:5 分鐘 烹煮時間:15 dis分鐘

Directions:

  • Soak 1 tablespoon of dried shrimps in a bowl of water for about 10 minutes.
  • Chinese cabbage washed and cut into 1-2 inches slices.
  • Finely chop 3 green onions. Separade green and white parts.
  • Pour 2 tablespoons of vegetable oil into a frying pan. Turn on low medium heat. Add drained dried shrimps. Stir fry for 2-3 minutes till the shrimps are dried and slightly brown.
  • Add white part of chopped green onions into the pan. Add Chinese cabbage. Cover the pan and turn the stove to medium heat. Cook for 5 minutes.
  • Remove the cover, Turn the top cabbage over to the bottom; the bottom to the top. Cover and cook for another 3 minutes.
  • Add 1/3 teaspoon of salt and 1/4 teaspoon of Hondashi in the pan. Stir and mix well.
  • Dissolve 1 tablespoon of corn starch in 2-3 tablespoons of water. Slowly pour and mix the corn starch to the pan.
  • Add the green part of green onions in the pan and cook for 1-2 minutes. Turn off the heat and ready to serve.

作法:

  • 把1大匙蝦米泡在冷水中10分鐘左右。
  • 大白菜洗淨,切成1-2 吋寬的大塊。
  • 葱洗淨切成葱花,把葱白色和緑色部分分開。
  • 倒2大匙油到炒菜鍋中,打開中小火,翻炒蝦米約2-3分鐘,直到蝦米變乾微微焦黃。
  • 把葱白加入鍋中,再加入切好的大白菜,蓋上蓋子。轉成中火,煮5分鐘。
  • 打開鍋蓋,把上層的白菜翻至下層,下層翻到上層。蓋上鍋蓋,再煮3分鐘。
  • 加1/3小匙鹽,1/4小匙鰹魚粉,拌炒均勻。
  • 把1大匙大白粉,加入2-3大匙水,混合均勻後,慢慢拌入鍋中。
  • 加入葱花,再煮1-2分鐘。關火,可以上桌了。

Note: This Chinese cabbage dish is a common economic dish in China. The Chinese name, Kai yang, means small dried shrimps. The success of the dish is to slightly brown dried shrimps till the aroma comes out before adding other ingredients. You can also add dried mushrooms in this dish.

筆記:開陽白菜是中國很平民經濟的一道菜。開陽是指小蝦米。這道菜成功的關鍵是要花時間把蝦米爆香,除去油耗味之後,再加其他食材。如果喜歡香菇的話,也可以加些乾香菇來做這道菜。
