Directions:
- Chinese broccoli washed and cut into sections. If baby Chinese broccoli is used, just separate big ones to serving sizes, as shown in the pictures.
- Get 5-6 garlic cloves. Cut each clove into 2-3 slices.
- Pour 2 tablespoons of vegetable oil into a frying pan. Turn on medium heat. Place garlic in the pan; cook and brown the garlic for 2 minutes.
- Place Chinese brown in the pan. Add one cup of water. Cover the pan and cook for 5 minutes.
- Uncovered. Turn the Chinese broccoli over, the top to the bottom, the bottom to top. Cover the pan and cook for another 3 minutes.
- Open the cover, Add 1/4 teaspoon of salt in the pan. Stir and cook well for 3 minutes. Turn off the heat.
- Remove excess water in the pan to the sink. Pour 2 tablespoons of oyster sauce in the pan and mix well.
- Arrange Chinese broccoli on a plate. Drizzle oyster sauce on top of the broccoli.
作法:
- 芥蘭洗淨切段。若是用芥蘭苗,把大的枝葉用手分成小部分,如照片中所示。
- 取5個蒜瓣,把每個蒜瓣切成2-3個蒜片。
- 倒2 大匙蔬菜油到炒菜鍋中,打開中火,放入蒜片,爆香2分鐘。
- 加入芥蘭,再加入一大杯水,加蓋煮5分鐘。
- 打開鍋蓋,將上層的芥蘭翻到下層,下層翻到上層。蓋上鍋蓋,再煮3分鐘。
- 加入1/4小匙鹽,拌炒3分鐘,關火。
- 把鍋子裏多的水分倒入水漕中,加入2大匙蠔油和芥蘭拌勻。
- 把芥蘭排在盤子上,將少許蠔油灑在上面,就可以上桌了。
Note: Chinese broccoli will be dried and turn blackish color if not being cooked with enough water. I used to boil them in salty water and then mix them with oyster sauce for this reason, However, it comes out plain, not as flavorful as served in restaurants. I have tried to stir fry Chinese broccoli with enough water, as in this recipe. Just pour out the excess water before mixing with oyster sauce. It is easy, tasty and healthy.
筆記:芥蘭煮的時候,如果水加的不夠,葉子會太乾而且變黑。我之前常常在鹽水中燙熟後,加蠔油拌勻,來做蠔油芥蘭,但味道不如餐廳做的好吃。在這個食譜中,我先爆香蒜片,炒芥蘭時加入足量的水煮熟,最後將多餘的水倒掉,再拌入蠔油。這樣做起來,簡單好吃又營養。
