Shrimp Broccoli 緑色花椰菜炒蝦仁


Ingredients: 2 heads of Broccoli, 10 shrimps, 1 egg, garlic, salt, corn starch

Prep time: 8 minutes Cook time: 12 minutes

材料:2 顆 緑色花椰菜,10 隻蝦子,1 個蛋,蒜頭,鹽,太白粉

準備時間:8 分鐘 烹煮時間:12 分鐘

Directions:

  • Cut Broccoli into florets and washed.
  • Slice garlic cloves into thin slices.
  • Shrimps washed and dried. Place shrimps in a small bowl and add 1 egg and 1 tablespoon of corn starch. Use hand to rub and mix them well until all corn starch dissolved.
  • Pour 2 tablespoons of vegetable oil into frying pan. Turn on medium heat. Place garlic slices in the pan. Cook for 2 minutes.
  • Add broccoli florets and 1/4 cup of water in the pan. Cover and cook for 5 minutes.
  • Add 1/4 teaspoon of salt. Stir and mix well for 1-2 minutes.
  • Evenly Pour shrimp mixture into the pan on top of the broccoli. Cover and cook for 2 minutes.
  • Remove the cover. Stir and cook for another minute or two until all shrimps are done, turning into red color. Turn off the heat and ready to serve.

作法:

  • 花椰菜從莖部切開,分成適當大小,洗淨備用。
  • 將蒜瓣切成蒜片。
  • 蝦子洗淨擦乾,放入小碗中。打入一個蛋,加1 大匙太白粉,用手按摩拌勻,直到太白粉完全溶解。
  • 加2大匙蔬菜油到炒菜鍋中,開中火,加入蒜片爆香,煮約2分鐘。
  • 加入綠色花椰菜和1/4 杯水,加簋,煮5分鐘。
  • 加1/4 小匙鹽到鍋中,混合拌炒1-2分鐘。
  • 均勻地把蝦子和蛋的混合液灑在花椰菜上,蓋上鍋蓋,煮2分鐘。
  • 打開鍋蓋,繼續拌炒2分鐘,直到所有蝦子煮熟變成紅色。關火,可以盛盤上桌了。

Note: Most recipes recommend cover shrimps with a little egg white for tender texture. I often trouble with the leftover egg yolk. For everyday cooking, I decide to add a whole egg into the shrimps and mix the corn starch in. It turns out pretty good. Just have little white and yellow egg colors on the broccoli. Doesn’t look bad at all. This is a very healthy and simple dish. You can also use frozen broccoli florets to save time and energy.

筆記:大部分食譜在處理蝦子時,會加入一些蛋白,這樣會讓煮好的蝦子軟嫩。我常常為剩下的蛋黃發愁,不知道如何處理。因為是家常料理,我就試著把整個蛋和太白粉都和蝦子加在一起,結果味道相當不錯,也把蛋的營養一起加入。只是綠色花椰菜上,會有一些白色和黃色的蛋的顏色, 並不難看。這是一道非常營養簡單的菜。你也可以用冷凍的緑色花椰菜來做這道菜,更為省時省事。
